Meike, the two Swiss national dishes (raclette and fondue) are both vegetarian, but are only any good if you like vast quantities of melted cheese The Swiss eat more pasta than any country in the world apart from Italy! I'd be happy to write out some melted-cheesy and pasta recipes for you later - we vegetarians need to stick together  _________________

wow nice topic..thanks guys!
I have a big book called " cucchiaio verde" ( green spoon) that is all about vegetarian recipes...I'll post some in the new days
rite in this moment I'm doing something very easy: Pasta with lil tomato
(cherry tomato)
x2:
cut a cup of them in small pieces, then warm a lil spoon of oil and add some onion, whe the onion is golden add the tomatos and let them in with 2 spoons of water for 10 minutes
Cook the pasta normally, add the tomatos and some parmisian ah istead of parmisian you can add some pieces of Nori ( sea grass).
Slurp...dinner is ready see you later

MMMMMMMMMM!!!I loooove cherry tomatoes...Esp fresh so anything that involves cooking them isn't as exciting _________________

Thanks everyone.
I am going to the grocery store tonight to make some of this stuff.
Really looking forward to including spinach and mushrooms into my new lifestyle. I love both and have never had them the basic way.
What I forgot to mention is my lactose problem. I really can't have a lot of cheese and really no milk. I can do cheese, but in small doses and not overload.

I know it's a little late but, I was a strict vegitarian for 10 years and part of that time a vegan too. So I still probably eat 1/2 veggie food and 1/2 meat meals depending on my mood.
Veggie Stir Fry
I usually make a tofu stir fry that is extremely easy and good too.
1- 1 pkg (10-12oz) FIRM tofu (not the kind from asia, like the silken)
2- fresh or frozen vegetables (1pkg) or 2 cups fresh chopped
(brocolli, carrot, onion, garlic, maybe baby corns, bell peppers. whatever)
3- use soy sauce to season or make your own seasoning or buy a package of teriyaki seasoning or whatever you like
prep- start with heating up onions and garlic in some olive oil for about 2-3 min
next add cubed - cut (squares about 1in) of tofu and fry on med-high for 10-15 min. (the bottoms will be golden brown when done) then flip them and cook for another 10 mins or so.
next add vegetables and stir and cover and leave on med heat to steam/fry them....
add soy sauce or seasoning. cook until it'd done!

1- frozen veggie burgers
2- veggie lasange
3- pasta w/ marinara sauce

Clayton and I are trying to eat better together. I started and am doing good, but it is way much harder for him. Plus, with our budgets - it is not so easy to buy all healthy, natural food.
Anyway, this morning I made breakfast while he was sleep and didn't tell him that I didn't use regular eggs. I used these All-Natural Farm Fresh Eggs (Produced by hens fed a vegetarian, whole grain diet rich in corn and soy proteins with no animal fat, animal by-products, or antibiotics. info here: http://moarkllc.com/pagefiles/faq.html)
and I cut up tomatos, green pepper, and onion in it, and added fresh spinach and cheese later on. I didn't tell him about the eggs. He ate them and I asked how he liked it and he loved them and then I showed him that they were the all-natural farm eggs and he looked surprised, but wanted more!
Little by little, we are getting there.
But, I suggest this type of recipe for a breakfast. The veggies make it taste so good. I cut up bananas and strawberries and had them also (separate of course).

I usually make things based on taste...and it usually involves a lot of garlic, and i like some salty flavors...sometimes i follow a recipe or i'll make it up as I go...based on what ingredients i have. Ok, so here's a vegetarian quiche...
1 onion
2-5 cloves garlic smashed
1 tsp thyme
4-5 eggs
splash of milk
salt and pepper to taste
a cup of shredded cheese (colby is good)
i cheat and use a frozen pie crust.....
heat oven to 350 (F), place pie crust in oven for 5 mins or so...sautee onions with garlic, add seasonings, in sep bowl mix eggs and milk, salt and pep...remove crust from oven and put onion mixture in first, then pour egg/cheese mixture over the top...bake about 35 mins or so until knive comes clean.
