With a standard iPod nano you can't watch video's. EvoV installed a special piece of software that some enthusiasts made. I don't know the details but as said before; if you install that, you will void your warranty. And yes, you could install the normal firmware back so that it's a normal iPod again, but when you have a problem with it and it won't boot for example, you are stuck with an iPod that has it's warranty void and there is no way of reinstalling that firmware then. I wouldn't do it as long as you still have it in your warranty-period.
But then again, I wouldn't buy an iPod. I'm really happy with my iaudio m5l...unmatched audio quality. The iPod sounds like a lawnmower compared to this  plus it can play music for over 30 hours without a recharge, and no need for that memory hog of an app called iTunes.
