puff!!! i love cooking... cuz... I love EATING (thx God I'm skinny, cuz if I had the size of what I eat I would be veeeery fat! hehehe)
As I'm from Mexico I love mexican food... now I'm a bit busy with school but once I have some free time I'll post here some easy recipes of Mexican food!!!

Any Ideas?...
I bought some Jerusalum Artichokes that were reduced in Waitrose's yesterday....does anyone have any suggestions what I should cook with them????

Jan for example try sunchokes instead of potatoes in ur favorite potato pancake recipe. They can be substituted for turnips or parsnips in most recipes or take a look at this recipe:
Jerusalem Artichoke and Ham Eggrolls Recipe
Jerusalem artichokes take the place of starch in tasty and easy eggrolls.
INGREDIENTS:
2 pounds Jerusalem artichokes (sunchokes), peeled
20 eggroll wrappers
1 ounce butter
5 ounces ham, chopped
6 shallots, thinly sliced
3 garlic cloves, minced
1 Tbsp chopped chives
Salt and pepper
1 egg white, lightly beaten
Canola oil for deep-frying
PREPARATION:
Simmer Jerusalem artichokes in salted water until al dente. Mince into small bits. Set aside.
In a skillet, heat butter and add ham and shallots. _________________

But what the hell is an eggroll wrapper??????
Will follow your advice and cook as if potato! That recipe is really like mashed potato I think...these artichokes are gonna be hard little buggers to peel!
Incidentally, for anyone liking mashed potatoe, Stephan (Bear) gave me a handy hint when he stayed with me - add some nutmeg to the potato at the mashing stage . _________________ All Hail the King |
